Last weekend, I ate homemade pizza smothered in parmesan tomato sauce, homegrown tomatoes, mozzarella, red onion, basil from the garden… and the memory was extra sweet since it was made and consumed amidst conversation between old friends and new.
This weekend, that pizza was still hanging around in my mind. I wanted to spend time on pizza dough, slather homemade pesto my mom made on the crust, and layer on crunchy veggies and melted/lightly crisped cheese.
I followed the Smitten Kitchen Lazy Pizza Dough recipe and it’s a winner- all it requires is that you mix together flour, water, yeast and salt in a bowl (don’t even knead it) and cover it with plastic wrap until you need it 22 hours later. It also gives you the option to make a day of and a lunchtime dough if the night before version is too much.
