What do you eat when you’ve had pizza for three meals in a row? According to my lovely farm lady friends in Montana, this delicious (and surprisingly healthy) salad! It has a kale/spinach base and is tossed with a dijon dressing. As with any salad, the toppings really pull it all together.
Ingredient options: choose the ones you like and toss them all together!
-kale and spinach, thinly sliced so that the kale isn’t too strong
-croutons (bonus points if you use leftover pizza crust to make the croutons)
-crumbled feta, goat cheese, or halloumi
-some type of protein- cold chicken, sausage, or spiced garbanzos
-dressing (usually I whisk together dijon, olive oil, lemon, a bit of honey, salt, and pepper)
